The oil and food fats industry face today many challenges, among these certainly the most complex is the oxidative degradation that alters the smell of the products, the taste and finally it attributes an harmful component to food. The food industry has not only introduced the partial or integral hydrogenation of dietary oils and fats, from which margarines and hydrogenated fats derive, but also the antioxidants derived from oil called BHA/BHT that quickly lose their effectiveness and are sensitive to temperatures that exceed 80° C. These solutions adopted by the food industry are now well known for the damage they cause to human health.
